Rinse the yellow lentils thoroughly under running water.
In a pot, add the lentils and 600ml of water. Bring to a boil, then reduce the heat and simmer until the lentils are soft (about 20-25 minutes).
While the lentils are cooking, finely chop the onion and tomatoes.
In a separate pan, heat the vegetable oil over medium heat.
Add the cumin seeds and mustard seeds to the hot oil. Let them splutter for a few seconds.
Add the chopped onion to the pan and sauté until golden brown.
Add the ginger garlic paste and sauté for another 2 minutes.
Add the chopped tomatoes, turmeric powder, and chili powder. Cook until the tomatoes are soft and the oil starts to separate from the mixture.
Once the lentils are cooked, add the tomato-onion mixture to the pot of lentils. Mix well.
Add salt to taste and let the dal simmer for another 5-10 minutes.
Serve hot with rice or roti.
