1Rinse the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for about 20 minutes.
While the rice is soaking, finely chop the onion, tomatoes, and green chili.
Heat the oil in a large pan over medium heat. Add the mustard seeds and cumin seeds. Let them splutter for a few seconds.
Add the chopped onion and green chili to the pan. Sauté until the onion becomes translucent.
Add the chopped tomatoes and turmeric powder. Cook until the tomatoes become soft and mushy.
Drain the soaked rice and add it to the pan. Stir well to coat the rice with the tomato mixture.
Add 2 cups of water and salt to taste. Bring the mixture to a boil.
Once it starts boiling, reduce the heat to low, cover the pan with a lid, and let it simmer for about 15-20 minutes or until the rice is cooked and the water is absorbed.
Turn off the heat and let the rice sit covered for another 5 minutes.
Fluff the rice with a fork and garnish with chopped coriander leaves before serving.
