Heat oil in a large pan over medium heat and add cumin seeds. Let them sizzle for a few seconds.
Add finely chopped onions and sauté until they turn golden brown.
Add minced garlic and grated ginger, and fry for another minute until the raw smell disappears.
Blend the tomatoes to a puree and add to the pan. Cook until the oil starts to separate from the tomato mixture.
Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a couple of minutes.
Cut the chicken into bite-sized pieces and add to the pan. Stir well to coat the chicken with the spices.
Cook the chicken until it turns white on all sides.
Add enough water to cover the chicken, bring to a boil, then reduce the heat to a simmer. Cover and cook until the chicken is tender, about 20-25 minutes.
Sprinkle garam masala over the curry and mix well. Cook for another 5 minutes.
Garnish with chopped fresh cilantro before serving. Serve hot with rice or naan bread.
