1Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
Heat the ghee in a large pot over medium heat. Add the cumin seeds and mustard seeds, and sauté until they start to crackle.
Add the chopped onion and sauté until golden brown.
Stir in the chopped tomatoes and cook until they soften.
Add the mixed vegetables and sauté for a few minutes.
Stir in the garam masala, turmeric powder, red chili powder, and salt. Mix well.
Add the rinsed rice to the pot and stir to coat the rice with the spices.
Pour in the water and bring to a boil.
Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the water is absorbed.
Remove from heat and let it sit covered for 5 minutes.
Fluff the rice with a fork and garnish with fresh coriander leaves before serving.
