Peel and devein the shrimp, then set aside.
In a large pot, heat a tablespoon of oil over medium heat.
Add the chopped onions, bell peppers, and celery to the pot. Sauté until the vegetables are soft, about 5 minutes.

Add the shrimp to the pot, stirring to combine. Cover and cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.
