1Peel and chop the carrots, potatoes, and onion into small pieces.
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and sauté for 3-4 minutes until softened.
Add the minced garlic, ground cumin, and ground coriander. Stir and cook for 1 minute until fragrant.
Add the chopped carrots and potatoes to the pot. Stir to coat the vegetables with the spices.
Pour in the vegetable stock and bring to a boil.
Reduce the heat, cover, and simmer for 20-25 minutes, or until the vegetables are tender.
Use an immersion blender to blend the soup until smooth, or transfer to a blender in batches.
Season with salt and black pepper to taste.
Serve hot, garnished with fresh herbs if desired.
