In a large bowl, combine 600g ground beef, 1 egg, 60g breadcrumbs, 1 tbsp grated ginger, 2 cloves minced garlic, and 1 tbsp soy sauce. Mix until just combined.

Shape the mixture into a loaf and place it on a lined baking tray or in a loaf pan.

In a small bowl, mix 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp brown sugar, and half of the chopped scallions to make the glaze.
