1Boil the potatoes until tender, then peel and mash them.
Heat a tablespoon of oil in a pan, add cumin seeds, and let them splutter.
Add chopped onion and green chilies, sauté until the onion turns golden brown.
Add the mixed vegetables and cook for 5-7 minutes until they are tender.
Add mashed potatoes, garam masala, coriander powder, and salt. Mix well and cook for another 2 minutes. Let the filling cool.
In a bowl, mix all-purpose flour with a pinch of salt and 2 tablespoons of oil. Gradually add water to form a stiff dough.
Divide the dough into small balls and roll each into a thin oval shape.
Cut each oval in half to form two semi-circles.
Take one semi-circle, fold it into a cone shape, and seal the edge with water.
Fill the cone with the vegetable mixture and seal the top edge with water.
Heat oil in a deep pan for frying.
Fry the samosas in batches until they are golden brown and crispy.
Remove and drain on paper towels. Serve hot with chutney or sauce.
