Preheat your oven to 200°C (400°F).
Wash the potatoes thoroughly and pierce them several times with a fork. Place them on a baking tray and bake for 45-60 minutes, or until tender.
While the potatoes are baking, chop the broccoli into small florets. Bring a pot of salted water to a boil and blanch the broccoli for 2-3 minutes, then drain and set aside.
Finely chop the onion and garlic. In a large skillet, melt 1 tablespoon (14g) of butter over medium heat. Add the onion and garlic, sauté for 2-3 minutes until softened.
Add the ground pork to the skillet. Cook, breaking it up with a spoon, until browned and cooked through, about 6-8 minutes. Season with salt, pepper, and paprika to taste.
Add the blanched broccoli to the pork mixture and cook for another 2 minutes. Remove from heat.
When the potatoes are done, let them cool slightly. Cut each potato in half lengthwise and carefully scoop out most of the flesh, leaving a thin shell. Place the scooped potato flesh in a bowl.
Mash the potato flesh with the remaining 1 tablespoon (14g) of butter. Add the pork and broccoli mixture, and half of the crumbled toasted whole wheat bread. Mix well and adjust seasoning if needed.
Spoon the filling back into the potato shells. Sprinkle the remaining crumbled bread on top for a crunchy topping.
Place the stuffed potatoes back on the baking tray and bake for another 10-15 minutes, until the tops are golden and crispy.
Serve hot and enjoy your Broccoli and Pork Stuffed Potatoes!
