1Rinse the basmati rice under cold water until the water runs clear. Soak it in water for about 20 minutes, then drain.
Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
Add the chopped onion and sauté until it turns golden brown.
Stir in the ginger-garlic paste and sauté for another minute until the raw smell disappears.
Add the chopped tomatoes and cook until they become soft and mushy.
Mix in the turmeric powder, red chili powder, and salt. Cook for another minute.
Add the mixed vegetables and sauté for 2-3 minutes.
Add the soaked and drained rice to the pan and gently mix it with the vegetables and spices.
Pour in 4 cups of water and bring it to a boil.
Once it starts boiling, reduce the heat to low, cover the pan with a lid, and let it simmer for about 15-20 minutes or until the rice is cooked and the water is absorbed.
Turn off the heat and let it sit covered for another 5 minutes.
Fluff the rice gently with a fork and serve hot.
