2Soak the rice noodles in warm water for about 20 minutes or until they are soft. Drain and set aside.
Heat the vegetable oil in a large pan or wok over medium-high heat.
Add the shrimp and cook until they turn pink, about 2-3 minutes. Remove the shrimp from the pan and set aside.
In the same pan, add the beaten eggs and scramble until fully cooked. Remove and set aside.
Add the tamarind paste, fish sauce, sugar, and chili flakes to the pan. Stir well to combine.
Add the soaked rice noodles to the pan and toss to coat them in the sauce.
Return the cooked shrimp and scrambled eggs to the pan. Add the bean sprouts and green onions. Toss everything together until well combined and heated through.
Serve the Pad Thai hot, garnished with crushed peanuts.
