1Bring a large pot of salted water to a boil. Add the whole wheat spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
Add the lemon zest and juice to the skillet, stirring to combine with the garlic and oil.
Add the drained spaghetti to the skillet and toss to coat in the lemon-garlic oil. If the pasta seems dry, add a splash of the reserved pasta water.
Stir in the chopped parsley and half of the grated parmesan cheese. Season with black pepper and salt to taste.
Serve immediately, topped with the remaining parmesan cheese and extra parsley if desired.
