1Bring a large pot of salted water to a boil. Add the dry spaghetti and cook according to the package instructions until al dente.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
Zest the lemon and squeeze out the juice. Add both the zest and juice to the skillet with the garlic. Stir to combine and cook for another 1 minute.
Reserve about 1/2 cup of the pasta cooking water, then drain the spaghetti.
Add the drained spaghetti to the skillet with the lemon-garlic mixture. Toss well to coat the pasta, adding a little reserved pasta water if needed to loosen the sauce.
Stir in the chopped parsley and half of the grated parmesan cheese. Season with salt and black pepper to taste.
Serve immediately, topped with the remaining parmesan cheese and extra parsley if desired.
