Wash the potatoes thoroughly and pierce them several times with a fork. Place them on a baking tray and bake for 45-60 minutes, or until tender.

While the potatoes are baking, finely chop the onion and salami. Grate the cheese if not pre-grated.

Once the potatoes are cooked, let them cool slightly. Cut each potato in half lengthwise and carefully scoop out most of the flesh, leaving a thin layer to keep the skins intact. Place the scooped-out potato flesh in a bowl.

Mash the potato flesh and mix in the chopped onion, chopped salami, grated cheese, mayonnaise, and ketchup. Stir until well combined.
