1In a mixing bowl, combine 200 grams of semolina, 100 grams of all-purpose flour, and 1 teaspoon of baking soda. Gradually add water to form a smooth dough.
Cover the dough with a damp cloth and let it rest for 30 minutes.
Roll out the dough into a thin sheet and cut small circles using a cookie cutter.
Heat oil in a deep frying pan and fry the circles until they puff up and turn golden brown. Remove and drain on paper towels.
In a bowl, mash 200 grams of boiled potatoes and mix with 100 grams of chickpeas, 1 teaspoon of chaat masala, 1 teaspoon of red chili powder, and 1 teaspoon of cumin powder.
For the spicy mint water, blend 1 teaspoon of tamarind paste, 1 teaspoon of mint leaves, 1 teaspoon of coriander leaves, 2 green chilies, and 500 ml of water. Add 1 teaspoon of black salt and mix well.
To serve, make a small hole in each puri, fill with the potato-chickpea mixture, and dip into the spicy mint water. Enjoy!
