1Rinse the dried fish in water to remove excess salt and set aside.
Cut the brinjal into cubes and soak in salted water to prevent browning.
Heat the vegetable oil in a pan over medium heat.
Add cumin seeds and let them splutter.
Add chopped onion and sauté until golden brown.
Add minced garlic and sauté for another minute.
Add chopped tomatoes and cook until they soften.
Stir in turmeric powder, chili powder, and salt.
Add the dried fish and cook for 3-4 minutes.
Drain the brinjal and add to the pan.
Pour in the water and bring to a boil.
Reduce the heat, cover, and simmer for 15-20 minutes until the brinjal is tender.
Adjust seasoning if necessary and serve hot.
