3Heat the olive oil in a large pot over medium-high heat.
Add the beef stew meat and cook until browned on all sides.
Remove the beef from the pot and set aside.
In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent.
Stir in the garlic powder, onion powder, paprika, cumin, Italian seasoning, white pepper, and cajun seasoning. Cook for 1-2 minutes until fragrant.
Add the tomato paste and cook for another 2 minutes, stirring constantly.
Pour in the beef broth and bring to a boil.
Add the browned beef back into the pot along with the diced tomatoes and mixed vegetables.
Reduce the heat to low, cover, and let simmer for
5 to 2 hours, or until the beef is tender.
Taste and adjust seasoning if necessary before serving.
