Prepare the ingredients by peeling and deveining the prawns, and cutting the bacon into small pieces.

Zest the lemon and set aside 1 tsp of lemon zest. Juice the lemon and set aside the juice.

Heat a large pan or wok over medium-high heat. Add the bacon pieces and cook until crispy. Remove the bacon from the pan and set aside, leaving the bacon fat in the pan.
