Ingredients
4 Servings
- Cake flour150 g
- Finely ground almond flour40 g
- Granulated sugar160 g
- Egg whites120 g
- Unsalted butter75 g
- Whole milk150 ml
- Vanilla extract5 ml
- Almond extract3 ml
- Baking powder8 g
- Fine salt2 g
Instructions
- 1
Preheat the oven to 175°C (350°F). Line the bottom of a 20 cm (8-inch) round cake pan with parchment paper and lightly grease the sides.
- 2
Bring the butter, milk, and egg whites to room temperature. Reserve 40 g of the granulated sugar for whipping with the egg whites.
- 3
Sift the cake flour, almond flour, baking powder, and salt together into a medium bowl. Whisk well to distribute the almond flour evenly.
- 4
In a large bowl, beat the softened butter with the remaining 120 g granulated sugar for 3–4 minutes, until very pale and fluffy.
- 5
Mix the vanilla extract and almond extract into the milk.
- 6
Add the dry ingredients to the butter mixture in three additions, alternating with the flavored milk in two additions. Begin and end with the dry ingredients, mixing on low speed just until smooth after each addition.
- 7
In a clean, grease-free bowl, whip the egg whites until foamy. Gradually add the reserved 40 g sugar and continue whipping until glossy medium-stiff peaks form.
- 8
Fold one-third of the whipped egg whites into the batter to lighten it. Gently fold in the remaining whites in two additions, taking care not to deflate them.
