1Heat the olive oil in a large pot over medium heat.
Add the chopped onion and sauté for 3-4 minutes until translucent.
Stir in the minced garlic and cook for another 1 minute until fragrant.
Add the cubed pumpkin and chopped apples to the pot. Stir to combine.
Pour in the vegetable broth and bring the mixture to a boil.
Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the pumpkin and apples are tender.
Add the chopped fresh sage, salt, and black pepper. Stir well.
Remove the pot from heat. Use an immersion blender to puree the soup until smooth, or carefully transfer the soup in batches to a blender and blend until smooth.
Taste and adjust seasoning if needed. Serve hot, garnished with extra sage if desired.
