Broccoli, Potato & Cheese Bake

- broccoli300 g
- cheddar cheese100 g
- onion1 medium (about 110g)
- olive oil1 tablespoon (about 15ml)

Preheat your oven to 200°C (390°F).

Peel and slice the potatoes into

Cut the broccoli into small florets and slice the onion thinly.

Bring a large pot of salted water to a boil. Add the potato slices and cook for 5 minutes. Add the broccoli florets and cook for an additional 2 minutes. Drain well.

Heat the olive oil in a pan over medium heat. Add the sliced onion and sauté until soft and translucent, about 5 minutes.

Lightly grease a baking dish with a little olive oil. Layer half of the potatoes on the bottom, followed by half of the broccoli and half of the sautéed onions. Season with salt and pepper.
