In a large bowl, combine the pork rib chunks, olive oil, smoked paprika, chili powder, and a pinch of salt and pepper. Toss well to coat the meat evenly.

Thread the pork rib chunks, red bell pepper pieces, red onion wedges, and sliced jalapeños alternately onto metal or soaked wooden skewers.
