In a large mixing bowl, combine 200g quinoa flour,
5 teaspoon salt, and
5 teaspoon baking powder.
Add 2 tablespoons olive oil and 120ml water to the dry ingredients.
Mix well with a spoon or spatula until a soft, pliable dough forms. If the dough is too sticky, add a little more quinoa flour; if too dry, add a splash more water.
Divide the dough into 4 equal portions and roll each into a ball.
Place a ball of dough between two sheets of parchment paper and roll it out into a thin circle, about 3-4mm thick. Repeat with the remaining dough balls.
Heat a non-stick skillet or frying pan over medium heat.
Carefully peel off the top parchment paper and transfer the flatbread to the hot skillet.
Cook for 2-3 minutes on one side, until bubbles form and the underside is golden brown. Flip and cook for another 1-2 minutes on the other side.
Remove from the skillet and keep warm in a clean kitchen towel. Repeat with the remaining flatbreads.
Serve warm as a wrap, with dips, or as a side to your favorite dishes.
