1Preheat your oven to 275°F (135°C).
Heat the olive oil in a large oven-safe pot over medium-high heat.
Season the chuck roast with salt and black pepper.
Sear the chuck roast in the pot until browned on all sides, about 4-5 minutes per side. Remove the roast and set aside.
In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
Pour in the beef broth and stir to combine, scraping up any browned bits from the bottom of the pot.
Return the chuck roast to the pot. Add the chopped carrots and potatoes around the roast.
Sprinkle the thyme over the top.
Cover the pot with a lid and transfer it to the preheated oven.
Roast for 3-4 hours, or until the meat is tender and easily shreds with a fork.
Remove the pot from the oven and let the roast rest for a few minutes before serving.
