In a large bowl, combine 400g all-purpose flour, 7g active dry yeast, and 1 tsp salt. Mix well.
Add 250ml warm water and 1 tbsp olive oil to the dry ingredients. Stir until a sticky dough forms.
Knead the dough on a lightly floured surface for about 8-10 minutes, until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.
While the dough is rising, heat 1 tbsp olive oil in a skillet over medium heat. Add the thinly sliced onion and 1 tsp sugar. Cook, stirring occasionally, for 15-20 minutes until the onion is golden brown and caramelized. Set aside to cool.
Preheat your oven to 220°C (428°F). Grease a baking tray or line it with parchment paper.
Punch down the risen dough and transfer it to the prepared tray. Gently stretch and press the dough to fit the tray.
Evenly spread the caramelized onions over the surface of the dough. Press your fingers into the dough to create dimples.
Drizzle a little extra olive oil over the top if desired, and sprinkle with a pinch of salt.
Bake in the preheated oven for 20-25 minutes, or until the focaccia is golden brown and cooked through.
Remove from the oven, let cool slightly, then slice and serve warm.
