Rinse the long grain rice thoroughly under cold water until the water runs clear. Set aside.
Cut the boneless chicken breast into bite-sized cubes and season lightly with a pinch of salt.
Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
In the same pan, add the remaining 1 tablespoon of vegetable oil. Add the chopped onion and sauté until translucent, about 2-3 minutes.
Add the rinsed rice to the pan and stir for 2 minutes to toast slightly.
Pour in the coconut milk and 2 cups of water. Add the curry powder, thyme, and salt. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
Add the mixed vegetables and cooked chicken to the rice. Stir gently to combine and cook for another 3-5 minutes until the vegetables are heated through.
Taste and adjust seasoning if necessary. Serve hot and enjoy your Nigerian Coconut Chicken Fried Rice!
