1Crack the 4 large eggs into a bowl and beat them well. Add 1/4 teaspoon of salt and 1/4 teaspoon of black pepper, and mix thoroughly.
Heat 1 tablespoon of butter in a non-stick skillet over medium heat.
Add 1 cup of broccoli florets to the skillet and sauté for about 3-4 minutes until they are tender.
Dice the 2 medium tomatoes and add them to the skillet. Cook for another 2 minutes until the tomatoes are slightly softened.
Pour the beaten eggs over the broccoli and tomatoes in the skillet.
Cook the omelette for about 3-4 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow underneath.
Once the omelette is mostly set, fold it in half and cook for another minute.
Slide the omelette onto a plate and serve hot.
