1Peel the potatoes and cut them into small cubes.
Peel and finely slice the onions.
Heat the vegetable oil in a large non-stick skillet over medium heat.
Add the potatoes to the skillet and cook for 8-10 minutes, stirring occasionally, until they start to soften and turn golden.
Add the sliced onions and salt to the skillet. Continue to cook for another 5-7 minutes, stirring occasionally, until the onions are soft and the potatoes are cooked through.
Make four small wells in the hash and crack one egg into each well.
Cover the skillet with a lid and cook for 4-5 minutes, or until the egg whites are set but the yolks are still runny (cook longer if you prefer firmer yolks).
