Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll up tightly. Repeat with the remaining wrappers and filling.
Heat a large skillet over medium heat and add a little olive oil. Place the egg rolls in the skillet, seam side down, and cook until golden brown and crispy on all sides, about 2-3 minutes per side.
