1Cut the beef brisket into bite-sized pieces.
Peel and cut the carrots into chunks.
Peel and chop the onion.
Mince the garlic cloves.
Heat the vegetable oil in a large pot over medium heat.
Add the chopped onion and minced garlic to the pot and sauté until fragrant.
Add the beef brisket to the pot and brown on all sides.
Stir in the tomato paste, fish sauce, soy sauce, five-spice powder, black pepper, and sugar.
Add the beef broth, bay leaf, and lemongrass stalk to the pot.
Bring the mixture to a boil, then reduce the heat to low and simmer for about
5 to 2 hours, or until the beef is tender.
Add the carrot chunks and chili paste to the pot and continue to simmer for an additional 30 minutes.
Remove the bay leaf and lemongrass stalk before serving.
Serve the Vietnamese Beef Stew hot, garnished with fresh herbs if desired.
