1Rinse and soak the red eyed peas in water for at least 4 hours or overnight.
Drain the soaked peas and set aside.
Heat the vegetable oil in a large pot over medium heat.
Add the cumin seeds and let them sizzle for a few seconds.
Add the chopped onion and sauté until golden brown.
Add the chopped tomatoes and green chilies, and cook until the tomatoes are soft.
Stir in the coriander powder, turmeric powder, red chili powder, and salt. Cook for another 2 minutes.
Add the soaked red eyed peas and mix well.
Pour in the coconut milk and bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes or until the peas are tender.
Stir in the garam masala and cook for another 5 minutes.
Garnish with chopped cilantro before serving.
Serve hot with rice or bread.
