1Preheat your oven to 180°C (350°F).
Peel, core, and dice the apples into small cubes.
In a large skillet, heat 1 tablespoon (14g) of ghee over medium heat. Add the diced apples and sauté for 3-4 minutes until they begin to soften.
Sprinkle in the chai masala and half of the sugar (50g). Stir well and cook for another 2-3 minutes until the apples are fragrant and slightly caramelized. Remove from heat and set aside.
In a mixing bowl, combine the semolina, desiccated coconut, chopped walnuts, remaining sugar (50g), and salt.
Melt the remaining 1 tablespoon (14g) of ghee and pour it into the dry mixture. Mix with your fingers until the mixture resembles coarse crumbs.
Grease a baking dish lightly with ghee. Spread the chai-spiced apple mixture evenly on the bottom.
Sprinkle the semolina crumble mixture evenly over the apples, pressing down gently.
Bake in the preheated oven for 25-30 minutes, or until the top is golden and crisp.
Allow to cool slightly before serving. Enjoy warm, optionally with a scoop of vanilla ice cream or a dollop of yogurt.
