1Rinse the rice thoroughly under cold water until the water runs clear.
In a large pot, bring 4 cups of water to a boil. Add the rice and cook for about 15-20 minutes or until the rice is tender. Drain and set aside.
In a large skillet, heat the olive oil over medium heat.
Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
Add the minced garlic and chopped green chili to the skillet and sauté for another 2 minutes.
Add the chopped tomatoes to the skillet and cook until they soften, about 5 minutes.
Add the cooked rice to the skillet and mix well with the vegetables.
Season with salt and black pepper, stirring to combine all the ingredients evenly.
Cook for an additional 5 minutes, stirring occasionally, to allow the flavors to meld together.
Remove from heat and serve hot.
