1Begin by seasoning the chicken with salt, black pepper, and half of the minced garlic. Let it marinate for at least 15 minutes.
Heat the vegetable oil in a large pot over medium heat. Add the marinated chicken and cook until browned on all sides. Remove the chicken and set aside.
In the same pot, add the remaining garlic, chopped onion, and bell pepper. Sauté until the onion is translucent.
Stir in the tomato paste and thyme, cooking for another 2-3 minutes until the paste is well incorporated.
Add the rice to the pot, stirring to coat the grains with the tomato mixture.
Pour in 4 cups of water, and return the chicken to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
Fluff the rice with a fork, adjust seasoning if necessary, and serve hot.
