1Bring a large pot of salted water to a boil. Add the dry spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it brown.
Add the lemon zest and lemon juice to the skillet, stirring to combine with the garlic and oil.
Add the drained spaghetti to the skillet and toss to coat in the lemon-garlic oil mixture. If the pasta seems dry, add a little reserved pasta water until you reach your desired consistency.
Stir in the chopped parsley, grated parmesan cheese, black pepper, and salt. Toss everything together until well combined and the cheese is melted.
Serve immediately, garnished with extra parsley and parmesan if desired.
