Rinse the toor dal thoroughly under running water.
In a pressure cooker, add the rinsed toor dal, 2 cups of water, and 1/2 teaspoon of turmeric powder.
Cook the dal in the pressure cooker for about 3-4 whistles or until it becomes soft and mushy.
In a separate pan, heat 1 tablespoon of oil over medium heat.
Add 1 teaspoon of mustard seeds and let them splutter.

Add 1 cup of mixed vegetables (carrot, potato, beans) to the pan and sauté for 2-3 minutes.
Add the cooked dal to the pan along with 1 tablespoon of sambar powder and 1 tablespoon of tamarind paste.
Mix well and let it simmer for 10-15 minutes, allowing the flavors to meld together.
Add salt to taste and adjust the consistency of the sambar by adding more water if needed.
Serve hot with rice or idli.
