1Rinse the long-grain rice thoroughly under cold water until the water runs clear.
Heat the vegetable oil in a large pot over medium heat.
Add the chopped onion and sauté until translucent.
Stir in the chopped bell peppers and cook for another 2-3 minutes.
Add the tomato puree, cayenne pepper, and thyme. Cook for about 5 minutes, stirring occasionally.
Pour in the chicken stock and bring the mixture to a boil.
Add the rinsed rice to the pot, stirring well to combine.
Season with salt to taste.
Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
Fluff the rice with a fork and serve hot.
