Baked Honey-Date Oat Pudding

Instructions

1. 1

Preheat the oven to 180°C (350°F).

2. 2

Use a small amount of the butter to grease a medium baking dish.

3. 3

Place the chopped dates in a large bowl. Warm the milk with the remaining butter until the butter melts, without allowing the milk to boil.

4. 4

Pour the warm milk mixture over the dates and leave them to soften for 10 minutes.

5. 5

Stir in the honey until evenly combined.

6. 6

Add the oats and baking soda, then mix thoroughly. Let the mixture rest for 5 minutes so the oats can begin absorbing the liquid.

7. 7

Transfer the mixture to the prepared baking dish and spread it evenly.

8. 8

Bake for 30–35 minutes, or until the pudding is set and lightly golden on top.

9. 9

Allow the pudding to cool for 10 minutes before serving warm.
