Take a slice of bread and spread a generous amount of the spicy potato mixture on it. Cover with another slice of bread to form a sandwich.
Repeat the process with the remaining bread slices and potato mixture.
Heat a non-stick pan or griddle over medium heat. Place the sandwiches on the pan and toast each side until golden brown and crispy.
Once toasted, remove the sandwiches from the pan and let them cool slightly before serving.
