Ingredients

Rinse the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.

Heat 1 tbsp of ghee in a large pot over medium heat. Add the sliced onions and sauté until golden brown. Remove half of the onions and set aside for garnishing.

Add the chopped tomatoes to the pot and cook until they become soft and mushy.

Add the mixed vegetables, biryani masala, turmeric powder, red chili powder, and salt. Cook for 5-7 minutes until the vegetables are tender.

Stir in the yogurt, chopped cilantro, and mint leaves. Cook for another 2-3 minutes.

In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained basmati rice. Cook until the rice is 70% cooked. Drain the rice.

Layer the partially cooked rice over the vegetable mixture in the pot. Drizzle the remaining 1 tbsp of ghee over the rice.

Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes, allowing the flavors to meld together.
