1Preheat your oven to 220°C (428°F). Line a baking tray with parchment paper.
Wash and scrub the potatoes thoroughly. Cut them into thick wedges, leaving the skin on for extra crispiness.
Place the potato wedges in a large bowl. Add the cornstarch and toss well to coat all the wedges evenly.
Drizzle the vegetable oil over the coated potato wedges. Add the salt and toss again to ensure even distribution.
Arrange the wedges in a single layer on the prepared baking tray, making sure they are not overlapping.
Bake in the preheated oven for 30-35 minutes, flipping the wedges halfway through, until they are golden brown and crispy.
While the wedges are baking, prepare the sweet chili sauce. In a small bowl, mix together the chili sauce, sugar, vinegar, and red chili flakes until well combined.
Once the potato wedges are done, transfer them to a large mixing bowl. Pour the prepared sweet chili sauce over the hot wedges and toss gently to coat them evenly.
Serve the Sweet Chili Potato Wedges hot, garnished with extra chili flakes if desired. Enjoy!
