Pour in the beef broth and bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let it simmer for 45 minutes.
Add the peeled and diced potatoes to the pot.
Continue to simmer for another 30 minutes, or until the potatoes are tender.
Adjust seasoning to taste and serve hot.
