Mocha Panna Cotta

   In a small bowl, sprinkle the gelatin over 1/4 cup of the milk and let it sit for about 5 minutes to soften.

   In a saucepan, combine the remaining milk, sugar, and instant coffee. Heat over medium heat until the sugar and coffee dissolve, stirring occasionally.

   Add the dark chocolate to the saucepan and stir until the chocolate is completely melted and the mixture is smooth.

   Remove the saucepan from the heat and stir in the gelatin mixture until it is fully dissolved.

   Pour the mixture into individual serving cups or ramekins.

   Refrigerate for at least 4 hours or until set.

   Serve chilled, optionally garnished with whipped cream or chocolate shavings.
