Rinse the basmati rice thoroughly under cold water until the water runs clear. In a saucepan, add 200g basmati rice and 400ml water. Bring to a boil, then reduce heat, cover, and simmer for 12-15 minutes until the rice is cooked and water is absorbed. Fluff with a fork and set aside.
While the rice is cooking, heat 2 tsp vegetable oil in a large skillet or wok over medium heat.
Add 120g chopped onions and sauté for 2-3 minutes until they turn translucent.
Add 2 chopped green chilies and sauté for another minute.
Add 300g cauliflower florets to the pan and stir well.
Sprinkle
5 tsp turmeric powder,
75 tsp red chili powder, and 1 tsp salt over the vegetables. Mix thoroughly to coat the cauliflower evenly with the spices.
Stir-fry the cauliflower mixture for 8-10 minutes, stirring occasionally, until the cauliflower is tender but still slightly crisp.
Taste and adjust salt or spice as needed. Remove from heat.
Serve the spicy gobi stir-fry hot with the cooked basmati rice on the side. Enjoy your meal!
