In a blender or food processor, combine the allspice, brown sugar, soy sauce, lime juice, vegetable oil, scotch bonnet peppers (remove seeds for less heat), garlic cloves, and fresh thyme. Blend until a smooth marinade forms.
Place the pork ribs on a large tray or in a shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight for best flavor.
Remove the ribs from the refrigerator and let them come to room temperature for about 30 minutes.
Place the ribs on a baking tray lined with foil. Cover the tray tightly with another sheet of foil.
Bake in the preheated oven for 2 hours, or until the ribs are tender.
Remove the top foil and increase the oven temperature to 220°C (430°F). Roast the ribs uncovered for an additional 15-20 minutes, basting occasionally with the pan juices, until the ribs are caramelized and slightly charred.
