- samp (crushed corn kernels)500 g
- beans (sugar beans or kidney beans)500 g
- wateras needed for soaking and cooking
- saltto taste
- vegetable oil2 tablespoons
- onion, finely chopped1
- green pepper, diced1
- tomatoes, chopped2
- curry powder1 teaspoon
- turmeric1 teaspoon
- paprika1 teaspoon
Preparación
- 1
Begin by soaking the samp and beans separately in water overnight to soften them.
- 2
The next day, drain the water from both the samp and beans, then place them together in a large pot. Cover with fresh water and bring to a boil. Reduce the heat and simmer for about 2 hours, or until both are tender, adding more water as necessary.
- 3
Once the samp and beans are cooked, drain any excess water and season with salt to taste.
- 4
In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion and green pepper, and sauté until the onion is translucent.
- 5
Stir in the chopped tomatoes, curry powder, turmeric, and paprika. Cook for a few minutes until the tomatoes break down and the spices are well combined.
- 6
Combine the tomato and spice mixture with the cooked samp and beans. Mix well and cook together for another 10-15 minutes, allowing the flavors to meld.
- 7
Taste and adjust the seasoning if necessary. Serve hot as a side dish or a main course.
