Preheat your oven to 375 degrees F (190 degrees C).
Place the chicken breasts between two sheets of plastic wrap and gently pound them with a meat mallet or rolling pin until they are about 1/4 inch thick.
Season both sides of the chicken breasts with salt and pepper.
Lay two slices of prosciutto on each chicken breast, followed by a slice of herbed Brie cheese.
Roll up the chicken breasts tightly and secure them with toothpicks.
Wrap each chicken roll with two strips of bacon, making sure to cover as much of the surface as possible.
Place the bacon-wrapped chicken rolls in a baking dish.
Bake in the preheated oven for 25 to 30 minutes, or until the chicken is no longer pink in the center and the bacon is crispy.
In the last 5 minutes of cooking, sprinkle the chopped fresh parsley over the chicken rolls to create a herb crust.
Remove from the oven and let the chicken rest for a few minutes before removing the toothpicks.
Slice the chicken rolls if desired and serve hot.
