Preheat your oven to 160°C (320°F).
In a small bowl, combine the olive oil, juice and zest of both lemons, chopped fresh oregano, minced garlic, sea salt, and black pepper. Mix well to create a marinade.
Place the pork ribs on a large baking tray or roasting pan. Pat them dry with paper towels.
Rub the marinade all over the pork ribs, ensuring they are evenly coated on all sides.
Cover the tray tightly with aluminum foil and let the ribs marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).
Place the covered ribs in the preheated oven and bake for 2 hours, or until the meat is tender and nearly falling off the bone.
Remove the foil, increase the oven temperature to 220°C (430°F), and roast the ribs uncovered for an additional 15-20 minutes to brown and caramelize the surface.
Remove from the oven, let the ribs rest for 5 minutes, then slice and serve garnished with extra fresh oregano and lemon wedges if desired.
