1Heat the vegetable oil in a large pot over medium-high heat.
Add the chuck roast and brown on all sides, about 5-7 minutes.
Remove the chuck roast from the pot and set aside.
In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
Return the chuck roast to the pot and add the beef broth, diced tomatoes, chopped carrots, and chopped green beans.
Season with salt, black pepper, and rosemary.
Bring the mixture to a boil, then reduce the heat to low and cover the pot.
Simmer for 2-3 hours, or until the meat is tender and the vegetables are cooked through.
Taste and adjust seasoning if necessary before serving.
