1In a large mixing bowl, sift the 150g self raising flour.
Add the 25g sugar to the flour and mix well.
Crack the 2 large eggs into the bowl and whisk together with the flour and sugar.
Gradually pour in the 250ml milk, whisking continuously to form a smooth, lump-free batter.
Stir in the 10ml cooking oil until fully combined.
Heat a non-stick frying pan over medium heat and lightly grease if necessary.
Pour a small amount of batter into the pan, swirling to coat the base evenly.
Cook for 1-2 minutes until the edges start to lift and the bottom is golden brown, then flip and cook for another 1 minute.
Repeat with the remaining batter, stacking the crepes on a plate.
Serve warm with your favorite sweet toppings such as fruit, syrup, or powdered sugar.
